Chicken and Proscuitto Tortelloni



2 9oz packages of Buitoni's chicken and Proscuitto Tortelloni

Homemade Marinara Sauce
1 26 oz can of DeCecco's peeled whole tomatoes in tomato juice with basil, diced
1 14.5 oz canned diced tomatoes, drained
1 6 oz canned tomato paste
2 cloves garlic, minced
4 tbsp parsley, minced
1/2 cup onion, minced
1/2 cup sauvignon blanc
1 tbsp salt
2 tsp black pepper
1 bay leaf
1 tbsp white sugar

Homemade Garlic Bread
Colombo Sliced Sourdough Bread
2 tbsp Land O' Lakes butter
2 cloves garlic
1 tspn parsley
Baby swiss cheese, sliced

1. In a large saucepan, bring water to boil then add tortelloni
2. In a large skillet, saute garlic and onion
3. Add tomatoes, tomato paste, wine, salt, sugar, bay leaf, black pepper, and parsley to garlic and onion skillet
4. Simmer marinara sauce for thirty minutes, stir occasionally and add more salt, sugar and black pepper to taste
5. Drain tortelloni and add to marinara skillet
6. Cook on low heat
7. Preheat oven to 325F
8. Throw in garlic and parsley into a food processor
9. Heat butter in a separate bowl and add finely minced garlic and parsley
10. Spread garlic butter on sliced colombo bread
11. Toast bread in oven for 10 minutes
12. Top garlic bread with swiss cheese and toast until cheese has melted
13. Remove marinara sauce from heat and serve

Kyle's Famous Spaghetti


This dish is definitely one of my all time favorites! Don't forget the Colombo garlic bread!

Olive Oil
5-6 Garlic cloves
1 lb ground beef (not lean)
1 6 oz can of tomato paste
1 14.5 oz can diced tomatoes
1 bottle of Prego Traditional
Sugar
Siracha Sauce
Basil
Salt
Pepper
Thin spaghetti noodles
Grated parmesan cheese

1. Throw minced garlic into oiled pan
2. Cook meat fully
3. Add strained diced tomatoes
4. Add tomato paste
5. To taste, sprinkle in salt and pepper
6. To taste add sugar and Siracha
7. Toss in some basil leaves
8. Cook noodles
9. Enjoy!

Chicken Parmesan


I was appalled that Kroger's (the one next to Lowes on West Broad) didn't have any garlic bread. At first I thought, ok so they don't have Colombo garlic bread .. but they had to stock something either in the bakery or frozen food section. Nothing!! In my opinion, no pasta dish is complete without garlic bread on the side..

Luckily we found a great alternative. Pillsbury makes these garlic and buttered flavored crescent rolls... They came out light and fluffy!!!

Ingredients:
Chicken Breasts
Egg
Italian Bread Crumbs
Kraft parmesan cheese (bottle)
Garlic
Sliced mozzarella
Olive Oil
Thin Spaghetti
Prego Traditional
Diced Tomatoes
Tomato Paste
Siracha Sauce
Sugar

1. Chicken:
- Mix bread crumbs and Kraft parmesan cheese in a large bowl
- Beat one egg into a separate smaller bowl
- (i like to cut my chicken breasts horizontally, this way they don't get chewy and tough)
- Dip chicken into egg and then into crumbs and cheese mixture
- place chicken into a pyrex
- add in more bread crumbs and parmesan cheese
- add in smashed garlic cloves
- drench chicken and garlic with olive oil
- cover with foil
- place into preheated oven (375-400 degrees) for about 15-2o minutes
- When almost cooked, place slices of mozzarella on over the chicken
- put chicken back into the oven for about 2-3 minutes
2. Sauce
- 2 tblspns olive oil in saucepan
- add in minced garlic
- drain and add diced tomatoes
- add 1 can of tomato paste
- add 1 jar of prego
- add salt and pepper to taste
- add siracha and sugar to taste
- add basil
